Southern Sundays: Chicken and Waffles for Two

Chicken and Waffles are the perfect combination of sweet and savory.  I tried to put my own spin on this traditional southern dish by adding parmesan cheese and dried thyme to the waffles and topping them with a Bourbon Maple Mustard Sauce.  The sauce is sweet and tangy and I think it pairs really well with the subtle woody, peppery flavor of the thyme in the waffles.  I baked my chicken because A.  while I am born and bred in the south I’ve never actually fried chicken before (queue the gasp) and B.  I added a butter and cream to the waffles and sauce so it was a desperate attempt to save calories where I could.
Make the sauce first, because it takes the longest to cook.  The whole dish can be made in about 30 minutes so I think it’s perfect for a “different” weeknight meal or to whip up on the weekends.  I did this recipe for two, but simply double to serve more people.  Enjoy!

    so I saw “chicken and waffles” on a menu somewhere and ever since have been wanting to try it…may attempt this soon;)
