Every Friday needs a good cocktail after a long week and this Lavender Collins is absolutely to die for! It’s a spin on a Tom Collins, but with a more delicate flavor using Lavender. It’s the loveliest of all lovely spring cocktails. Enjoy this Lavender Collins cocktail recipe!

- 1-1 1/2 cups of Gin or Vodka
- 1 cup of fresh squeezed lemon juice
- 1 ½ cups lavender syrup
- 3 cups of club soda
- Lavender Syrup: 2 cups of sugar, 2 cups of water 3 Tbsp of lavender buds. Boil the ingredients together in a saucepan until the sugar dissolves. Remove from the heat, cover and allow the lavender buds to steep in the simple syrup for about 10 minutes. Strain the liquid through a fine mesh sieve, discarding the lavender buds.
- In a small pitcher, mix together the Gin, lemon juice and lavender syrup. Just before serving, mix in the club soda. Pour in glasses over ice and garnish with sprigs of lavender.
