Ever since I did those watermelon mint and feta bites last week, I can’t get enough watermelon in my diet.  The watermelons that I have picked up at the farm stand have been so sweet and delicious, I needed something else to transform them in to.  The result…Ginger Watermelon Granita.  Granita is basically the Italian version of a snow cone.  It’s frozen liquid that you scrape every hour or so during the freezing process to create fluffy bits of ice.  This Ginger Watermelon Granita is super easy and it makes a ton so it’s perfect for a dinner party dessert during hot weather or a great alternative to ice cream to have in the freezer.  Because the watermelon was so naturally sweet, I really didn’t need to add a massive amount of sugar.  I definitely haven’t felt too bad having a small bowl of this yummy treat after dinner.  Hope you enjoy!

    We make watermelon granitas all the time but I’ve never thought to add ginger. Great idea!
