Here’s our final recipe of the week! It’s another great picnic item that you could take along if the weather is nice for Valentine’s Day on Saturday. With this Chicken Caesar Salad in Romaine Cups recipe, there will be absolutely NO picnicking happening this weekend in the Upstate, as it will not get out of the 40s. Burrrrrrr!! Maybe a picnic in front of the fire. That sounds super romantic, doesn’t it? With that I will say, Happy Early Valentine’s Day! I hope everyone has a wonderful weekend with their loved ones! Chicken Caesar Salad in Romaine Cups

- 2 cups of shredded chicken
- romaine lettuce
- croutons
- *******
- Caesar Dressing :
- 3/4 cup of grass fed yogurt or Greek yogurt
- juice of 1/2 lemon
- 1/4 cup of grated parmesan cheese
- 1 Tbsp of olive oil
- 2 Tbsp of anchovy paste
- 1/2 tsp of dried oregano
- 1 clove of garlic, grated
- 1 Tbsp of dijon mustard
- 1/4 tsp of salt and pepper
Instructions
- To make the dressing, combine all the ingredients from the yogurt to the salt and pepper in a bowl or small food processor. Mix together well. Taste to adjust the seasoning.
- Mix the shredded chicken with a little dressing to lightly coat it. Scoop into washed romaine leaves and add croutons if you'd like.
